The 2026 Intangible Cultural Heritage Noodle Summit recently kicked off in Shanxi, bringing together six provinces and municipalities—Beijing, Shanxi, Hebei, Inner Mongolia, Shaanxi, and Gansu—each presenting its signature noodle dishes. More than 130 classic offerings, from oat noodles and steamed dumplings to hot dry noodles, tempted taste buds across the board.
The event featured five key components: noodle-making demonstrations, a noodle market, an oat noodle championship, a regional intangible cultural heritage signature-dish showcase, and a forum on the inheritance and innovation of noodle-making. The oat noodle championship ran for three days, with master chefs taking turns demonstrating their deft techniques, giving visitors an up-close look at the artistry behind traditional noodle craftsmanship.
During the summit, Shanxi also rolled out several curated food trails. Attendees could enjoy discounted entry to major scenic spots with the event passport, catch intangible cultural heritage art performances, sample local delicacies along the routes, and fully immerse themselves in a travel feast blending history, culture, culinary skill, and the vibrant pulse of everyday life.
